Salmon And Asparagus Mornay


This delicious, cheesy, mouthwatering bake is the perfect winter warming dinner dish.

Not only is this meal full of flavour, it contains salmon, which includes EPA and DHA omega-3 fatty acids that help to decrease inflammation and protect the heart and brain.

Method

1. Cook the pasta in a saucepan of salted boiling water until al dente. Drain well. 2. Meanwhile, place breadcrumbs, lemon rind, oil, half the parmesan and half the parsley in a bowl and mix well. 3. Melt butter in a saucepan over medium heat. Add the flour and cook, stirring for 1 minute or until mixture bubbles and begins to come away from the side of the pan. Remove from heat. 4. Gradually whisk in the milk and remaining cheese until combined. Place over medium heat and cook, stirring constantly, for 2 minutes or until the sauce boils and thickens. 5. Combine pasta, salmon, asparagus and white sauce. 6. Put salmon mixture into an ovenproof dish. Sprinkle with breadcrumb mixture and put in the oven at 180 degrees until top is golden brown. 7. Sprinkle with parsley and serve.
