We seem to be over the main hump of flu season this year, thank goodness. Despite being in the home stretch, now’s not the time to become complacent. A nasty cold has been bumping around of late, taunting those of us who got the flu vaccine. Luckily, there are plenty of foods that may improve immune-responses to help fight disease naturally and get us back on our feet. One of the tried and trusted favourites is Chicken soup!
Every culture seems to have its own twist on how to make the best Chicken soup – from a quick roast up of bones with aromatics to the meticulously slow and delicious process of making stock overnight without ever letting the pot come to a boil. Whatever your preferred method, one thing we all agree on is that when we are sick, our bodies crave light and healing foods.

Method
1. Combine chicken, onion, carrot, celery, garlic, parsley, thyme, stock and ground pepper in a large saucepan over medium-high heat. Simmer for 45 minutes.
2. Blend soup until smooth.
3. Season with salt and serve.
